Day 10: Three-Cheese Ravioli

Today I managed to pull something in my neck, ouch. I didn't realize the work that went in to rolling, and rolling, and kneading and rolling homemade pasta. This was the first time i made it. It was very good, but a pasta gadget next time please! Plus it needed to be rolled thinner, it was a little too thick!

I'd recommend it, though next time I might try semolina flour instead. For the filling I used a basic mix of ricotta, mozzarella, parmesan, basil, oregano, salt, pepper and one egg. The sauce was just passata that I added garlic, salt, pepper, water and balsamic vinegar too, then heated up, simple!
